Description

This creamy Spinach and Mushroom Lasagna is a delightful vegetarian dish packed with layers of aromatic mushrooms, tender spinach, and rich béchamel sauce. Perfect for a comforting family meal or a special dinner.


Ingredients

  • 12-15 lasagna sheets (no pre-cooking needed)
  • Béchamel Sauce:
  • 100 g unsalted butter
  • 100 g wheat flour (Type 405 or 550)
  • 1 liter whole milk, room temperature
  • 1/2 tsp freshly grated nutmeg
  • 1 bay leaf
  • Salt and white pepper to taste
  • Mushroom Filling:
  • 750 g mixed mushrooms (champignons, king oyster, shiitake, oyster mushrooms)
  • 2 tbsp olive oil
  • 1 large onion, finely diced
  • 3 cloves garlic, finely chopped
  • 150 ml dry white wine (optional)
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • Salt and black pepper to taste
  • Spinach Filling:
  • 500 g fresh spinach (or 400 g frozen, thawed and drained)
  • 250 g ricotta cheese
  • 100 g grated parmesan
  • 1 large egg
  • 1/4 tsp freshly grated nutmeg
  • Salt and black pepper to taste
  • For layering and topping:
  • 200 g grated mozzarella
  • 50 g extra grated parmesan


Instructions

  1. Preheat oven to 180°C (350°F).
  2. Prepare béchamel sauce: melt butter, stir in flour, gradually whisk in milk, add nutmeg, bay leaf, salt and white pepper, cook until thickened, then remove bay leaf.
  3. Prepare mushroom filling: heat olive oil, sauté onion and garlic, add mushrooms, cook until soft, deglaze with wine if using, stir in parsley and thyme, season with salt and pepper.
  4. Prepare spinach filling: cook spinach lightly if fresh, then mix with ricotta, parmesan, egg, nutmeg, salt, and pepper.
  5. Assemble lasagna: spread a thin layer of béchamel in baking dish, layer lasagna sheets, mushroom filling, spinach filling, béchamel; repeat until all ingredients are used, finishing with béchamel and top with mozzarella and parmesan.
  6. Bake for 35–40 minutes until golden and bubbling.
  7. Let stand 10 minutes before serving to set the layers.

Notes

  • Use a mix of mushrooms for deeper flavor.
  • Ensure spinach is well drained to avoid watery lasagna.
  • This dish can be prepared ahead and baked just before serving.
