Description
This creamy baked feta with giant white beans is a simple, irresistible dish. The combination of spicy tomato-bean sauce and warm, melting feta makes it perfect as a snack or appetizer, served with fresh baguette for dipping.
Ingredients
- 250 g canned giant white beans
- 2 garlic cloves
- 2 tbsp olive oil
- 400 g canned chopped tomatoes
- 1 tsp chili flakes
- 1 tsp sugar
- Salt and pepper to taste
- 200 g creamy feta
- 4 sprigs fresh thyme
- 1 fresh baguette for serving
Instructions
- Preheat the oven to 200°C (390°F).
- In a skillet, heat olive oil and sauté minced garlic for 1–2 minutes until fragrant.
- Add chopped tomatoes, chili flakes, sugar, salt, and pepper. Simmer for 5–7 minutes.
- Stir in drained white beans and transfer the mixture to an oven-safe dish.
- Place the feta on top and tuck thyme sprigs around it.
- Bake for 15–20 minutes until feta is soft and slightly golden.
- Serve hot with fresh baguette for dipping.
Notes
- You can use any mild or creamy feta.
- Optional: drizzle with olive oil before serving for extra richness.
- Great as a party appetizer or quick vegetarian meal.
