Description

This creamy baked feta with giant white beans is a simple, irresistible dish. The combination of spicy tomato-bean sauce and warm, melting feta makes it perfect as a snack or appetizer, served with fresh baguette for dipping.


Ingredients

  • 250 g canned giant white beans
  • 2 garlic cloves
  • 2 tbsp olive oil
  • 400 g canned chopped tomatoes
  • 1 tsp chili flakes
  • 1 tsp sugar
  • Salt and pepper to taste
  • 200 g creamy feta
  • 4 sprigs fresh thyme
  • 1 fresh baguette for serving


Instructions

  1. Preheat the oven to 200°C (390°F).
  2. In a skillet, heat olive oil and sauté minced garlic for 1–2 minutes until fragrant.
  3. Add chopped tomatoes, chili flakes, sugar, salt, and pepper. Simmer for 5–7 minutes.
  4. Stir in drained white beans and transfer the mixture to an oven-safe dish.
  5. Place the feta on top and tuck thyme sprigs around it.
  6. Bake for 15–20 minutes until feta is soft and slightly golden.
  7. Serve hot with fresh baguette for dipping.

Notes

  • You can use any mild or creamy feta.
  • Optional: drizzle with olive oil before serving for extra richness.
  • Great as a party appetizer or quick vegetarian meal.
