Description
This fluffy cottage cheese cloud bread is light, airy, and low-carb. Perfect as a sandwich base or snack, it’s quick to make with just a few simple ingredients.
Ingredients
- 100 g cottage cheese (curd)
- 3 eggs (size M), separated
- ¼ tsp baking powder
- Pinch of salt
- Optional: ½ tsp dried herbs or 1 tsp honey/vanilla
Instructions
- Preheat oven to 150°C (300°F) and line a baking sheet with parchment paper.
- Separate the egg whites and yolks.
- Mix cottage cheese, egg yolks, baking powder, salt, and optional flavorings until smooth.
- Whip egg whites until stiff peaks form.
- Gently fold egg whites into the cottage cheese mixture.
- Drop spoonfuls onto the baking sheet and shape into rounds.
- Bake for 25–30 minutes until golden and puffed.

- Can be stored in the fridge for 2–3 days or frozen for longer.
