Description

This fluffy cottage cheese cloud bread is light, airy, and low-carb. Perfect as a sandwich base or snack, it’s quick to make with just a few simple ingredients.


Ingredients

  • 100 g cottage cheese (curd)
  • 3 eggs (size M), separated
  • ¼ tsp baking powder
  • Pinch of salt
  • Optional: ½ tsp dried herbs or 1 tsp honey/vanilla


Instructions

  1. Preheat oven to 150°C (300°F) and line a baking sheet with parchment paper.
  2. Separate the egg whites and yolks.
  3. Mix cottage cheese, egg yolks, baking powder, salt, and optional flavorings until smooth.
  4. Whip egg whites until stiff peaks form.
  5. Gently fold egg whites into the cottage cheese mixture.
  6. Drop spoonfuls onto the baking sheet and shape into rounds.
  7. Bake for 25–30 minutes until golden and puffed.

  • Can be stored in the fridge for 2–3 days or frozen for longer.
