Description

Mozzarella Rösti with Zwiebel-Pilzrahmsoße is a delicious Swiss-style potato pancake dish served with a creamy onion and mushroom sauce. Crispy on the outside, soft and cheesy on the inside, perfect for a hearty meal.


Ingredients

Rösti:

  • 800g firm potatoes
  • 1 ball Mozzarella (ca. 125g), drained and cubed
  • 1 small onion, diced
  • 1 egg
  • 2-3 tbsp flour
  • Salt and pepper to taste
  • 2-3 tbsp olive oil or clarified butter for frying

Zwiebel-Pilzrahmsoße:

  • 300g mushrooms, sliced
  • 1 large onion, diced
  • 2 garlic cloves, finely chopped
  • 150ml cream
  • 100ml vegetable broth
  • 1 tsp thyme
  • 1 tsp paprika powder
  • Salt and pepper to taste
  • 2 tbsp butter or oil for frying


Instructions

  1. Peel and grate the potatoes. Squeeze out excess moisture.
  2. In a bowl, mix grated potatoes, mozzarella cubes, diced onion, egg, flour, salt, and pepper.
  3. Heat oil or butter in a frying pan over medium heat. Form small patties and fry until golden brown and crispy on both sides.
  4. For the sauce, sauté onions and garlic in butter or oil until translucent.
  5. Add mushrooms, thyme, paprika, salt, and pepper. Cook until mushrooms release moisture and soften.
  6. Add cream and vegetable broth. Simmer until sauce thickens.
  7. Serve Rösti hot with the creamy mushroom-onion sauce on top.

Notes

  • Use any firm potato variety for best Rösti texture.
  • Optional: sprinkle fresh parsley or chives on top before serving.
