Description

This Creamy Tuscan Salmon is a rich yet low-carb dinner featuring perfectly seared salmon fillets in a velvety garlic cream sauce with sun-dried tomatoes, spinach, and Parmesan. It’s an easy, restaurant-quality meal that’s ready in about 30 minutes and perfect for keto or low-carb lifestyles.


Ingredients

  • 4 salmon fillets (150180 g each), skinless if preferred
  • 2 tbsp extra virgin olive oil
  • 1 medium onion, finely diced
  • 34 garlic cloves, minced
  • 80100 g sun-dried tomatoes in oil, drained and sliced
  • 200 g fresh baby spinach
  • 150 ml vegetable broth
  • 200 ml heavy cream (30–35% fat)
  • 50 g grated Parmesan cheese (optional)
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • Pinch of chili flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Fresh basil or parsley, chopped, for garnish


Instructions

  1. Season the salmon fillets with salt and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the salmon for 4–5 minutes per side until golden and nearly cooked through. Remove from the pan and set aside.
  3. Reduce the heat to medium. Add the diced onion and cook for 3 minutes until softened.
  4. Stir in the garlic and sun-dried tomatoes. Cook for 1 minute until fragrant.
  5. Pour in the vegetable broth, scraping up any browned bits from the bottom of the pan.
  6. Add the heavy cream, Parmesan, oregano, basil, and chili flakes. Simmer for 3–5 minutes until the sauce thickens slightly.
  7. Stir in the baby spinach and cook until just wilted.
  8. Return the salmon to the skillet and spoon the sauce over the fillets. Simmer for 2–3 minutes until heated through.
  9. Garnish with fresh basil or parsley and serve immediately.

Notes

  • For a dairy-free version, use full-fat coconut milk or cashew cream and replace Parmesan with nutritional yeast.
  • Cod, halibut, or chicken breast work well instead of salmon.
  • Add zucchini, mushrooms, or bell peppers for extra vegetables.
  • Serve with cauliflower rice, zucchini noodles, or steamed broccoli for a complete low-carb meal.
