Description

This Asian Glass Noodle Salad is a light, refreshing, and colorful dish made with tender glass noodles, crunchy vegetables, and a flavorful sesame-lime dressing. It’s perfect as a healthy lunch, side dish, or meal prep recipe for warm days.


Ingredients

  • 200 g glass noodles
  • 2 carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 1 cucumber, julienned
  • 3 spring onions, sliced
  • 2 tbsp toasted sesame seeds
  • 3 tbsp soy sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tsp fresh ginger, grated
  • 1 small red chili, finely sliced (or to taste)


Instructions

  1. Prepare the glass noodles according to the package instructions. Drain, rinse with cold water, and set aside.
  2. Julienne the carrots and cucumber, thinly slice the bell pepper and spring onions, and finely chop the chili.
  3. In a small bowl, whisk together the soy sauce, lime juice, honey, sesame oil, grated ginger, and chili.
  4. Place the cooked glass noodles in a large mixing bowl.
  5. Add the carrots, bell pepper, cucumber, spring onions, and sesame seeds.
  6. Pour the dressing over the salad and toss well until everything is evenly coated.
  7. Let the salad rest for 10โ€“15 minutes so the noodles absorb the dressing.
  8. Serve chilled or at room temperature with extra sesame seeds on top.

Notes

  • Add grilled chicken, shrimp, or tofu for extra protein.
  • Fresh cilantro or mint adds even more freshness.
  • For extra crunch, top with roasted peanuts or cashews.
