Description
This Asian Glass Noodle Salad is a light, refreshing, and colorful dish made with tender glass noodles, crunchy vegetables, and a flavorful sesame-lime dressing. It’s perfect as a healthy lunch, side dish, or meal prep recipe for warm days.
Ingredients
- 200 g glass noodles
- 2 carrots, julienned
- 1 red bell pepper, thinly sliced
- 1 cucumber, julienned
- 3 spring onions, sliced
- 2 tbsp toasted sesame seeds
- 3 tbsp soy sauce
- 2 tbsp fresh lime juice
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tsp fresh ginger, grated
- 1 small red chili, finely sliced (or to taste)
Instructions
- Prepare the glass noodles according to the package instructions. Drain, rinse with cold water, and set aside.
- Julienne the carrots and cucumber, thinly slice the bell pepper and spring onions, and finely chop the chili.
- In a small bowl, whisk together the soy sauce, lime juice, honey, sesame oil, grated ginger, and chili.
- Place the cooked glass noodles in a large mixing bowl.
- Add the carrots, bell pepper, cucumber, spring onions, and sesame seeds.
- Pour the dressing over the salad and toss well until everything is evenly coated.
- Let the salad rest for 10โ15 minutes so the noodles absorb the dressing.
- Serve chilled or at room temperature with extra sesame seeds on top.
Notes
- Add grilled chicken, shrimp, or tofu for extra protein.
- Fresh cilantro or mint adds even more freshness.
- For extra crunch, top with roasted peanuts or cashews.
- The salad keeps well in the refrigerator for up to 2 days.
