Description

This Halloumi Tikka Masala is a rich and flavorful vegetarian twist on the classic Indian favorite. Marinated halloumi cheese is pan-fried until golden, then simmered in a creamy, spiced tomato sauce. It’s a quick and satisfying meal that’s perfect with rice or naan bread.


Ingredients

  • 400 g halloumi, cut into cubes
  • 200 g Greek yogurt
  • 2 tsp garam masala
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp paprika
  • 400 g chopped tomatoes (canned or fresh)
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 2 cm piece fresh ginger, grated
  • 2 tbsp cooking oil
  • Salt and black pepper, to taste
  • Fresh cilantro, chopped, for garnish


Instructions

  1. In a bowl, combine the Greek yogurt with 1 teaspoon garam masala, cumin, coriander, turmeric, paprika, salt, and pepper. Add the halloumi cubes and marinate for 15–20 minutes.
  2. Heat 1 tablespoon oil in a large skillet over medium heat. Cook the halloumi until golden on all sides, then transfer to a plate.
  3. Add the remaining oil to the skillet and sauté the onion for 5 minutes until softened.
  4. Stir in the garlic and grated ginger and cook for 1 minute until fragrant.
  5. Add the chopped tomatoes and remaining garam masala. Simmer for 10–12 minutes until the sauce thickens.
  6. Return the halloumi to the pan and gently stir to coat in the sauce. Simmer for another 3–5 minutes.
  7. Garnish with fresh cilantro and serve hot with basmati rice, naan, or flatbread.

Notes

  • For a creamier sauce, stir in a splash of heavy cream or coconut milk before serving.
  • Avoid overcooking the halloumi to keep it tender.
  • Add spinach or peas for extra vegetables.
  • Leftovers can be refrigerated for up to 2 days.
