Description

Soft and chewy cheesecake cookies with a creamy Philadelphia filling and warm cinnamon notes. A sweet dessert mash-up that combines cookie dough richness with cheesecake flavor.


Ingredients

  • 113 g unsalted butter (softened)
  • 110 g light brown sugar
  • 38 g white sugar
  • 1 egg (room temperature)
  • 0.5 tsp vanilla extract
  • 167 g all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp ground cinnamon
  • 0.25 tsp fine sea salt
  • For the filling:
  • 85 g cream cheese (Philadelphia or similar)
  • 19 g sugar (for filling)
  • For decoration:
  • Caramel sauce (optional, for drizzling)


Instructions

  1. Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
  2. Cream butter, brown sugar, and white sugar until fluffy.
  3. Add egg and vanilla extract, mix well.
  4. In a separate bowl, combine flour, baking soda, cinnamon, and salt.
  5. Gradually mix dry ingredients into wet ingredients to form dough.
  6. For filling, mix cream cheese and sugar until smooth.
  7. Take small portions of dough, flatten, add a bit of filling, and seal into cookies.
  8. Place on tray and bake for 10–12 minutes until edges are golden.
  9. Cool slightly and drizzle with caramel sauce if desired.

Notes

  • Chill dough for 20–30 minutes for thicker cookies.
  • Do not overbake for a soft cheesecake center.
  • Store in fridge for extra cheesecake texture.
