Ingredients
- 113 g unsalted butter (softened)
- 110 g light brown sugar
- 38 g white sugar
- 1 egg (room temperature)
- 0.5 tsp vanilla extract
- 167 g all-purpose flour
- 0.5 tsp baking soda
- 0.5 tsp ground cinnamon
- 0.25 tsp fine sea salt
- For the filling:
- 85 g cream cheese (Philadelphia or similar)
- 19 g sugar (for filling)
- For decoration:
- Caramel sauce (optional, for drizzling)
Instructions
- Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
- Cream butter, brown sugar, and white sugar until fluffy.
- Add egg and vanilla extract, mix well.
- In a separate bowl, combine flour, baking soda, cinnamon, and salt.
- Gradually mix dry ingredients into wet ingredients to form dough.
- For filling, mix cream cheese and sugar until smooth.
- Take small portions of dough, flatten, add a bit of filling, and seal into cookies.
- Place on tray and bake for 10–12 minutes until edges are golden.
- Cool slightly and drizzle with caramel sauce if desired.
Notes
- Chill dough for 20–30 minutes for thicker cookies.
- Do not overbake for a soft cheesecake center.
- Store in fridge for extra cheesecake texture.
