Description

This Maultaschen Salad is a quick, budget-friendly, and refreshing meal featuring pan-fried Maultaschen, crisp cucumber, juicy cherry tomatoes, leafy greens, and fresh herbs tossed in a tangy honey mustard dressing. It’s perfect for warm summer days, picnics, or an easy lunch or dinner.


Ingredients

  • 500 g Maultaschen, sliced
  • 1 cucumber, diced
  • 250 g cherry tomatoes, halved
  • 1 small red onion, thinly sliced
  • 100 g mixed leafy salad
  • 2 tbsp cooking oil
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh chives, chopped
  • For the Dressing:
  • 3 tbsp olive oil
  • 2 tbsp vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • Salt, to taste
  • Black pepper, to taste
  • Optional: Halal feta cheese, sweet corn, diced bell pepper, arugula, toasted sunflower seeds


Instructions

  1. Heat 2 tablespoons of oil in a large skillet over medium heat.
  2. Add the sliced Maultaschen and fry for 5–7 minutes until golden brown on both sides. Let cool slightly.
  3. In a large serving bowl, combine the cucumber, cherry tomatoes, red onion, leafy salad, parsley, and chives.
  4. Whisk together the olive oil, vinegar, mustard, honey, salt, and pepper until well combined.
  5. Add the warm Maultaschen to the salad along with any optional ingredients such as feta, corn, bell pepper, arugula, or sunflower seeds.
  6. Pour the dressing over the salad and gently toss until everything is evenly coated.
  7. Serve immediately or chill for 15–20 minutes before serving.

Notes

  • Grilled chicken or crispy bacon can be added for extra protein.
  • Use a balsamic vinegar for a richer flavor.
  • The dressing can be prepared a day ahead.
