Description
This Maultaschen Salad is a quick, budget-friendly, and refreshing meal featuring pan-fried Maultaschen, crisp cucumber, juicy cherry tomatoes, leafy greens, and fresh herbs tossed in a tangy honey mustard dressing. It’s perfect for warm summer days, picnics, or an easy lunch or dinner.
Ingredients
- 500 g Maultaschen, sliced
- 1 cucumber, diced
- 250 g cherry tomatoes, halved
- 1 small red onion, thinly sliced
- 100 g mixed leafy salad
- 2 tbsp cooking oil
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh chives, chopped
- For the Dressing:
- 3 tbsp olive oil
- 2 tbsp vinegar
- 1 tsp Dijon mustard
- 1 tsp honey
- Salt, to taste
- Black pepper, to taste
- Optional: Halal feta cheese, sweet corn, diced bell pepper, arugula, toasted sunflower seeds
Instructions
- Heat 2 tablespoons of oil in a large skillet over medium heat.
- Add the sliced Maultaschen and fry for 5–7 minutes until golden brown on both sides. Let cool slightly.
- In a large serving bowl, combine the cucumber, cherry tomatoes, red onion, leafy salad, parsley, and chives.
- Whisk together the olive oil, vinegar, mustard, honey, salt, and pepper until well combined.
- Add the warm Maultaschen to the salad along with any optional ingredients such as feta, corn, bell pepper, arugula, or sunflower seeds.
- Pour the dressing over the salad and gently toss until everything is evenly coated.
- Serve immediately or chill for 15–20 minutes before serving.
Notes
- Grilled chicken or crispy bacon can be added for extra protein.
- Use a balsamic vinegar for a richer flavor.
- The dressing can be prepared a day ahead.
