This Mediterranean Zucchini Rice Skillet with Feta is a colorful, wholesome one-pan meal featuring tender zucchini, sweet red peppers, fragrant herbs, fluffy rice, and creamy feta cheese. Perfect for busy weeknights, it’s packed with fresh Mediterranean flavors and comes together in under an hour.
Ingredients
- 2 cups rice (preferably brown rice)
- 3 medium zucchini, diced
- 1 red bell pepper, diced
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 200 g feta cheese, crumbled
- 4 cups vegetable broth
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat. Sauté the onion for 3–4 minutes until softened.
- Add the garlic and cook for 30 seconds until fragrant.
- Stir in the diced zucchini and red bell pepper. Cook for 5–7 minutes until slightly tender.
- Add the rice, oregano, basil, salt, and pepper. Stir well to coat the rice with the seasonings.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat to low, cover, and simmer until the rice is fully cooked and the broth is absorbed (about 20–40 minutes depending on the rice used).
- Remove from the heat and gently fold in the crumbled feta cheese.
- Garnish with fresh parsley and serve warm.
Notes
- Brown rice requires a longer cooking time than white rice.
- Add olives or cherry tomatoes for extra Mediterranean flavor.
- Store leftovers in the refrigerator for up to 3 days.
