Description

These Spinach Cottage Cheese Bagels are soft, chewy, and packed with protein. Made with cottage cheese, fresh spinach, and melty mozzarella, they’re a wholesome option for breakfast, meal prep, or healthy snacks that everyone will love.


Ingredients

  • 200 g full-fat cottage cheese
  • 2 tbsp olive oil
  • 1 large egg
  • 150 g all-purpose flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 100 g baby spinach, finely chopped
  • 100 g shredded mozzarella cheese


Instructions

  1. Preheat the oven to 190°C (375°F) and line a baking tray with parchment paper.
  2. In a large bowl, whisk together the cottage cheese, olive oil, and egg until smooth.
  3. Add the flour, baking powder, and salt. Mix until a soft dough forms.
  4. Fold in the chopped spinach and shredded mozzarella until evenly distributed.
  5. Divide the dough into 6 equal portions. Shape each into a ball, then poke a hole through the center to form a bagel.
  6. Place the bagels on the prepared baking tray and lightly flatten them if desired.
  7. Bake for 22–25 minutes, or until golden brown and cooked through.
  8. Allow to cool for 5 minutes before serving warm or at room temperature.

Notes

  • Sprinkle sesame seeds, everything bagel seasoning, or poppy seeds on top before baking.
  • Swap mozzarella for crumbled feta for a tangier flavor.
  • Store in an airtight container for up to 3 days or freeze for up to 2 months.
