These Spinach Cottage Cheese Bagels are soft, chewy, and packed with protein. Made with cottage cheese, fresh spinach, and melty mozzarella, they’re a wholesome option for breakfast, meal prep, or healthy snacks that everyone will love.
Ingredients
- 200 g full-fat cottage cheese
- 2 tbsp olive oil
- 1 large egg
- 150 g all-purpose flour
- 1 tsp baking powder
- 1 tsp salt
- 100 g baby spinach, finely chopped
- 100 g shredded mozzarella cheese
Instructions
- Preheat the oven to 190°C (375°F) and line a baking tray with parchment paper.
- In a large bowl, whisk together the cottage cheese, olive oil, and egg until smooth.
- Add the flour, baking powder, and salt. Mix until a soft dough forms.
- Fold in the chopped spinach and shredded mozzarella until evenly distributed.
- Divide the dough into 6 equal portions. Shape each into a ball, then poke a hole through the center to form a bagel.
- Place the bagels on the prepared baking tray and lightly flatten them if desired.
- Bake for 22–25 minutes, or until golden brown and cooked through.
- Allow to cool for 5 minutes before serving warm or at room temperature.
Notes
- Sprinkle sesame seeds, everything bagel seasoning, or poppy seeds on top before baking.
- Swap mozzarella for crumbled feta for a tangier flavor.
- Store in an airtight container for up to 3 days or freeze for up to 2 months.
