This Tender Salmon Potato Casserole is a rich and comforting baked dish featuring flaky salmon, thinly sliced potatoes, fresh spinach, and a creamy cheese sauce. It’s an easy family dinner that’s hearty, flavorful, and perfect for any night of the week.
Ingredients
- 500 g fresh salmon fillets, cut into bite-sized pieces
- 750 g potatoes, thinly sliced
- 200 g fresh spinach or broccoli
- 300 ml heavy cream
- 150 g shredded Gouda or Emmental cheese
- Salt, to taste
- Freshly ground black pepper, to taste
Instructions
- Preheat the oven to 180ยฐC (350ยฐF). Grease a medium baking dish.
- Boil the sliced potatoes for 8โ10 minutes until just tender. Drain well.
- If using broccoli, blanch it for 2โ3 minutes. If using spinach, simply rinse and drain.
- Layer half of the potatoes in the baking dish, followed by the salmon and spinach or broccoli. Season with salt and pepper.
- Top with the remaining potatoes and pour the heavy cream evenly over the casserole.
- Sprinkle the shredded cheese over the top.
- Bake for 35โ40 minutes until the potatoes are fully tender, the salmon is cooked through, and the cheese is golden and bubbly.
- Allow the casserole to rest for 5 minutes before serving.
Notes
- Add garlic, dill, or a squeeze of lemon juice for extra flavor.
- Use Gruyรจre for a richer cheesy topping.
- Serve with a fresh green salad for a complete meal.
- Leftovers can be refrigerated for up to 2 days.
