Description

This Tender Salmon Potato Casserole is a rich and comforting baked dish featuring flaky salmon, thinly sliced potatoes, fresh spinach, and a creamy cheese sauce. It’s an easy family dinner that’s hearty, flavorful, and perfect for any night of the week.


Ingredients

  • 500 g fresh salmon fillets, cut into bite-sized pieces
  • 750 g potatoes, thinly sliced
  • 200 g fresh spinach or broccoli
  • 300 ml heavy cream
  • 150 g shredded Gouda or Emmental cheese
  • Salt, to taste
  • Freshly ground black pepper, to taste


Instructions

  1. Preheat the oven to 180ยฐC (350ยฐF). Grease a medium baking dish.
  2. Boil the sliced potatoes for 8โ€“10 minutes until just tender. Drain well.
  3. If using broccoli, blanch it for 2โ€“3 minutes. If using spinach, simply rinse and drain.
  4. Layer half of the potatoes in the baking dish, followed by the salmon and spinach or broccoli. Season with salt and pepper.
  5. Top with the remaining potatoes and pour the heavy cream evenly over the casserole.
  6. Sprinkle the shredded cheese over the top.
  7. Bake for 35โ€“40 minutes until the potatoes are fully tender, the salmon is cooked through, and the cheese is golden and bubbly.
  8. Allow the casserole to rest for 5 minutes before serving.

Notes

  • Add garlic, dill, or a squeeze of lemon juice for extra flavor.
  • Use Gruyรจre for a richer cheesy topping.
  • Serve with a fresh green salad for a complete meal.
