Description

This Zucchini Cottage Cheese Bake is a creamy, protein-rich, and comforting dish made with fresh zucchini, cottage cheese, eggs, and melted cheese. Perfect as a healthy lunch, dinner, or meal prep option, it’s light yet satisfying and packed with flavor.


Ingredients

  • 23 medium zucchinis, thinly sliced
  • 500g cottage cheese (or ricotta / Greek yogurt)
  • 2 large eggs
  • 100g grated cheese (mozzarella or cheddar)
  • 1 small onion, finely chopped
  • 12 garlic cloves, minced
  • Salt and black pepper, to taste
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Optional: fresh parsley or dill for garnish


Instructions

  1. Preheat oven to 180°C (356°F) and grease a baking dish.
  2. Slice zucchini and lightly salt it to remove excess moisture. Let sit for 10 minutes, then pat dry.
  3. In a bowl, mix cottage cheese, eggs, onion, garlic, herbs, salt, and pepper.
  4. Fold in zucchini slices and mix well.
  5. Pour mixture into baking dish and top with grated cheese.
  6. Bake for 35–40 minutes until golden and set.
  7. Let cool slightly before serving. Garnish with fresh herbs if desired.

Notes

  • You can swap cottage cheese with ricotta or Greek yogurt for different texture.
  • Add spinach or carrots for extra vegetables.
  • Best served warm, but also delicious cold the next day.
